Scrambled tofu


Ingredients:

serves 2-3

  • 90g solid tofu

  • 1 tsp turmeric

  • 1 tsp smoked paprika

  • 4 cherry tomatoes

  • Salt & pepper

  • 2 tbsp almond Milk

  • 1 tsp nutritional yeast

  • 2 handfuls fresh baby spinach

  • 1/2 tsp coconut oil

  • 1 tsp basil

  • 1/2 tsp chopped garlic

Add ons:

  • 1/2 avocado

  • 1 handful of rocket


How to:

  • With clean hands, crumble the tofu into smaller pieces and add into a bowl.

  • Season with turmeric, nutritional yeast, smoked paprika, salt & pepper. Add the almond milk, give it a stir. Next, pop in the chopped tomatoes and let sit for 5 minutes to marinade.

  • In a frying pan, melt 1/2 tsp coconut oil and add the tofu scramble mixture to the pan, place lid on top and cook for 5-10 mins on a medium heat, stirring it regularly.

  • Add the spinach and garlic and sprinkle some basil on top and place pan lid on top, letting the spinach wilt for 2 mins.

  • Serve up with some sliced avocado on sourdough toast.
