Mediterranean sea bass tray bake


Ingredients :

serves 2-4

  • 2-4 boneless sea bass fillets

  • 1 small lemon, cut into slices

  • 2 red bell peppers

  • 2 large beef tomatoes

  • 2 small courgettes

  • 2 leek stalks

  • 1 garlic clove

  • 1 red onion

  • 2 tsp smoked paprika

  • 1 tsp cumin

  • 2 tsp mixed herbs

  • 2 tbsp coconut oil, melted

  • 1 tbsp fresh parsley


How to :

  • Preheat the oven to 200°.

  • Prep the vegetables. Wash and chop up the leeks, courgettes and peppers into cubes. Slice up the tomato into quarters. Finely chop the red onion and garlic.

  • Line a large baking tray with parchment paper and spread over the vegetables : garlic, onions, red peppers, courgettes , leeks and tomatoes evenly across 1 or 2 trays. Drizzle over the coconut oil and sprinkle over the spices : smoked paprika, mixed herbs and cumin then season with salt and pepper. Roast for 30-35 minutes. At half time, make sure to take out the trays, shake the veg so they turn over and pop them back in for remaining time.

  • Line a baking tray with parchment paper and add the sea bass. Drizzle 1/2 tsp melted coconut oil over the bass, season with salt, pepper and place lemon slices on top. Bake in the oven for 20 minutes.

  • Once cooked, plate up with half veggies and a fish fillet and garnish with the freshly chopped coriander.
