Date, tahini and choc chip cookies
Ingredients :
serves 6-8
1 cup rolled oats
1/2 cup almond flour
1/2 tsp baking soda
1/2 tsp salt
1/4 cup tahini
1/4 cup almond butter
1/4 cup maple / date syrup
1 tsp vanilla extract
1 tbsp plant milk
1/2 cup chopped medjool dates
1 tsp cinnamon
1/2 cup - 1 cup dark chocolate chunks
How to :
Preheat the oven to 200°. Line a baking tray with parchment paper.
In a mixing bowl, add the oats, almond flour, baking soda, cinnamon and salt.
Add in the tahini, almond butter, plant milk, maple syrup and vanilla extract.
Fold together to form a dough. Add your dark chocolate chunks in.
Scoop the dough into balls and flatten on to the baking tray. Sprinkle over some sea salt on top.
Bake for 10-12 minutes until golden brown.
Once cooked, remove from the oven and let cool for 10 minutes.
Serve up and enjoy.
Stores up to a week in an airtight container in the fridge.
