Date, tahini and choc chip cookies


Ingredients :

serves 6-8

  • 1 cup rolled oats

  • 1/2 cup almond flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/4 cup tahini

  • 1/4 cup almond butter

  • 1/4 cup maple / date syrup

  • 1 tsp vanilla extract

  • 1 tbsp plant milk

  • 1/2 cup chopped medjool dates

  • 1 tsp cinnamon

  • 1/2 cup - 1 cup dark chocolate chunks


How to :

  • Preheat the oven to 200°. Line a baking tray with parchment paper.

  • In a mixing bowl, add the oats, almond flour, baking soda, cinnamon and salt.

  • Add in the tahini, almond butter, plant milk, maple syrup and vanilla extract.

  • Fold together to form a dough. Add your dark chocolate chunks in.

  • Scoop the dough into balls and flatten on to the baking tray. Sprinkle over some sea salt on top.

  • Bake for 10-12 minutes until golden brown.

  • Once cooked, remove from the oven and let cool for 10 minutes.

  • Serve up and enjoy.

Stores up to a week in an airtight container in the fridge.
